Eating Seasonally
The cold weather outside makes me crave the warmth and aroma of hearty soups and stews inside using nutritionally packed winter vegetables. It's good for us and for the planet to eat what Mother Nature has to offer season by season whenever possible.
Winter offers a variety of vegetables that many people are unfamiliar with or are wary to try because they just don’t know how to prepare them. Here are two delicious recipes using readily available winter vegetables. One is simple and may already be a favorite. The other is more adventurous. Keep in mind, as with most soups and stews, you can substitute any vegetable with one that you like or have on hand.
ENJOY! And remember, true nourishment feeds your body, mind and spirit.
